Best Pancakes Ever

I have made lots of pancake recipes, and I have used many different mixes.  These pancakes by far are the BEST ones I have ever made.  They are light, fluffy and a tad sweet.  The freshly squeezed lemon juice gives them a flavor kick that makes them irresistible. I am lucky to always have fresh lemons on hand, because I have a lemon tree in my yard that flourishes all year.  Using fresh lemon juice is best, the bottle substitute just isn’t the same. 

Ingredients:

2 cups Original Bisquick
1 Tablespoons sugar
2 teaspoons baking powder
1 teaspoon vanilla
1 Tablespoons lemon juice
1 cup milk
2 eggs
chocolate chips (optional)

Directions:

Heat the griddle or skillet over medium-high heat or to 350 degrees.  Lightly grease the surface with cooking spry or vegetable oil.

Stir Bisquick, sugar, baking powder, vanilla, lemon juice, milk and eggs until blended. The batter will be smooth and not lumpy.

Pour batter onto the griddle in about 1/4 cupfuls.  (If desired, sprinkle with chocolate chips)

Cook until lots of little bubbles form and the edges are a bit dry.  Turn and cool until golden.
These pancakes tend to be a little darker looking.  

Note: My kids like to eat the pancakes plain with just a squirt of Chocolate or Extra Creamy Reddi Whip.
