Deer Valley Cast Iron Cookie

This recipe was first published in Dishing Park City by Kendall Kelly. This is simple, easy and tastes almost as good as the cookie.
For years I have tried to replicate the "Deer Valley Cookie", but nothing is better than treating yourself to a fresh cookie at Deer Valley.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • ½ Cup sugar
  • 1 large egg
  • 2 large egg yolks
  • 3 teaspoons vanilla extract
  • 10 ounces chocolate chips milk or semi-sweet
  • Vanilla ice cream for serving

Instructions
 

  • Preheat the oven to 350 F.
  • In a bowl, whisk together the flour, baking powder, baking soda and salt. In a separate bowl whisk together the butter, brown sugar, sugar, vanilla extract, egg and egg yolks in a bowl. Stir in the dry ingredients until just combined. This will take a minute or two and the mixture will be thick, but they will mix in. Stir in the chocolate chips.
  • Once all ingredients have been combined add mixture to a 8 inch cast iron skillet and bake for 20 to 25 minutes, or until it's mostly set in the center.
    Top with two scoops vanilla ice cream or gelato
